recipe :: Cinnamon Cupcakes


You don't know this but Cinnamon is my most favourite taste and smell in the whole wide world! And so, because tomorrow Mr Pepper and I are celebrating our anniversary I thought it would be a great opportunity to 'splash' out on the bestest of the best...why not?!
Here's the super delicious recipe which, by the way, I took from A Spoonful of Sugar. Hope you can find a little time for this amazing little treat....or...go on, have two then!

Makes 14 cupcakes

you will need:

3/4 cup of plain (all purpose) flour
3/4 cup cake flour
1/2 tbsp baking powder
1 tbsp cinnamon
1/2 butter, softened
3/4 cup sugar
2 large eggs
1 tsp vanilla extract
1/2 cup of mik
 
for the frosting:
 
1 1/4 cusp of icing (confectioners) sugar
1/2 cup butter, softened
2 tbsp honey
1/4 tsp cinnamon
1 tsp milk
 
method:
 
Preheat oven to 180ยบ C (350 F). Line muffin tray with paper pan liners.
 
Sift together flours, baking powder and cinnamon.
 
Cream butter and sugar until light and fluffy. Beat in the vanilla. Beat the eggs, one at a time until combined. Reduce speed and add flour mixture, alternating with milk, and beating until combined.
 
Divide mixture between the cupcake cups. Bake approx 20 minutes and transfer to a wine rack to cool.
 
For the frosting: Beat all the ingredients until smooth.Using a round piping nozzle, pipe onto cooled cupcakes. Optional: dust with cinnamon sugar to finish!

  1. mmm... this looks so good! I think I'll try this over the weekend. Last weekend I made apple cinnamon muffins which were quite the disaster - more like little hockey pucks! Hope your anniversary celebration was fun! Congratulations
