{recipe} Sticky Vanilla-Orange Cake

:: for the cake ::

1 cup {130g} self.raising flour
1 cup {130g} almond meal
4 eggs
1 cup {225g} caster sugar
5 1/4 ounces {150g} butter
1 tsp vanilla extract

:: for the topping ::

3/4 cup {170g} caster sugar
1/2 cup {125ml} water
1 vanilla bean, slipt
2 oranges, sliced thinly

- place sugar, water and vanilla bean in a medium-small {about 20 cms across} lightly buttered cast iron or nonstick skillet over medium heat. Stir until sugar dissolves. Add the sliced oranges and simmer for 12 minutes or until oranges become soft. Remove from the heat, set aside.

- pre-heat oven to 320ºF {160ºC}. Place eggs, vanilla extract, and sugar in a bowl  and using a mixer, beat for 8minutes or until mixture is thick, pale, and tripled in volume. Sift flour over egg mixture and fold through. Fold butter and almond meal in. Pour mixture over the oranges and bake for 35minutes or until cooked through when pierced with a toothpick. Put a platter on top of the skillet and overturn to serve.
